The big game is around the corner and we want to help you enjoy all the excitement. We’ve curated the perfect healthy and incredibly delicious game day menu. Learn how to make our Marinara and Turkey Sausage Pizza, Buffalo Cauliflower, and our signature Cal-a-Vie Popcorn.

Classic Marinara and Turkey Sausage Pizza

Marinara Sauce Ingredients:

2 tablespoons extra-virgin olive oil

3 cups diced yellow onions

4 garlic cloves, minced

3 tablespoons tomato paste

½ cup dry red wine

3 pounds tomatoes (about 6 large tomatoes or 48 ounces canned)

1 tablespoon fennel seed

1 teaspoon chili flakes

1 teaspoon sea salt

1 teaspoon black pepper

2 cups fresh basil, leaves torn

Marinara Sauce Directions:

In a large sauce pot, over medium heat, add the olive oil. Add the onions and sauté for about 7 minutes. When the onions start to turn brown and caramelize, add the garlic and sauté for 1 minute. Add the tomato paste and stir until it turns brick red in color. Deglaze with the red wine and reduce by half. Add the tomatoes, fennel seed, chili flakes, salt, black pepper and basil. Simmer for about 30 minutes. Transfer the tomato mixture to a blender and puree in batches until completely smooth. Set aside and let cool.

Toppings Ingredients 

2 cups shredded mozzarella cheese

½ pound turkey sausage, rolled into small balls

3 red bell peppers, roasted, peeled, seeded and diced

Preheat the oven to 350℉. Spread ¼ cup of the Marinara Sauce evenly over the pizza dough, o leaving a ½-inch border. Spread ¼ cup of mozzarella on top of the marinara. Place the small balls of turkey sausage over the mozzarella and sprinkle the red bell peppers evenly over the pizzas. Bake in the oven for 6 minutes. Rotate the pan and bake for an additional 4 minutes. Remove and let reset one minute before cutting into pieces.

 

Buffalo Cauliflower

Serves 4-6 as an appetizer

This is our healthy spin on the traditional buffalo wing appetizer. Cauliflower has a surprisingly similar texture to meat when roasted, making it a popular ingredient in vegetarian dishes. 

1 cauliflower head, core removed, cut into bite-sized florets (about 5-6 cups)

2 tablespoons grapeseed oil

½ teaspoon kosher salt

2-3 tablespoons Frank’s RedHotⓇ sauce (if unavailable, any other spicy buffalo sauce will work)

Preheat the oven to 350°F. In a large bowl, toss the cauliflower florets with grapeseed oil and salt. Spread evenly onto a baking sheet and roast in the oven for 15 minutes, or until crispy. Remove from the oven, toss in the hot sauce and return to oven for 10 minutes. Remove and allow to cool.

Assembly:

2 celery stalks, peeled and thinly cut into ¼-inch half moons

1 bunch green onions, trimmed and thinly sliced (using white and green parts)

¾ cup crumbled blue cheese

To serve, plate about ¼ cup roasted cauliflower and top with celery slices, green onions and crumbled blue cheese. Feel free to add as much hot sauce you like.  

Tip: Not everyone peels celery, but the stringy outside can be tough and hard to eat.  Use a regular peeler to remove this fibrous side.

 

Cal-a-Vie Popcorn

Serves 1

What makes our popcorn unique is the actual corn: We grow a variety that is strictly for popping. Then we put it through a special drying process to create the lightest, fluffiest, tastiest popcorn you could ever imagine.

Seasoning Mix:

1 teaspoon white sesame seeds

½ teaspoon black sesame seeds

1 teaspoon smoked paprika

½ teaspoon sea salt

½ teaspoon celery seed

½ teaspoon poppy seed

¼ teaspoon garlic powder

¼ teaspoon freshly ground black pepper

⅛ teaspoon aji amarillo powder

In a small bowl, combine all the ingredients. Set aside.

Popcorn:

1 cup popcorn, air popped

extra-virgin olive oil spray

1 teaspoon Seasoning Mix

Once the corn is popped, spray it with the olive oil and gently toss. Add the Seasoning Mix and adjust to taste.
