Coconut Vanilla Bean Ice Cream Recipe

Coconut Vanilla Bean Ice Cream
Yields 5 cups
Coconut milk is one of our favorite non-dairy milk alternatives, and it brings another layer of flavor to a traditional vanilla ice cream. Add a beautiful burst of color to this dessert by topping it with raspberries, mint or dark chocolate chips.
Guar gum and xanthan gum are thickening agents in foods and medicine. Because they are gluten free, they are often used as additives to replace wheat flour in baked goods. They also have been shown to reduce cholesterol and lower blood glucose levels. If you can’t find them at your local health food store, they are available for order online. We recommend using Bob’s Red Mill® brand.
4 cups coconut milk
1 cup agave
2 vanilla beans, scraped
3 tablespoons grapeseed oil
½ teaspoon xanthan gum
½ teaspoon guar gum
In a blender, combine all the ingredients and mix on high. Once the ingredients are fully blended, churn in an ice cream maker to the manufacturer's specifications. When ready, remove and place in the freezer overnight.
