Summer Salad Series

The bright colors of summer produce are worth celebrating, not to mention the delicious fresh flavors. This season, we'll share new healthy recipes from Cal-a-Vie Helath Spa during our Summer Salad Series. 

When we think summer, a delicious heirloom tomato is a must have at Cal-a-Vie Health Spa.  We know how to delight the taste buds and keep things simple so that you can enjoy this tantalizing creation at your next summer dinner party or celebration—did someone say 4th of July? With each bite, you will taste the tangy sweetness of the balsamic paired with the summer taste of tomato and watermelon—a celebration in your mouth! Enjoy.

 

Heirloom Tomato & Watermelon Summer Salad - Yields 4 Salads

 

Ingredients:

- 8 oz watermelon, medium diced

- 2 heirloom tomato, sliced paper thin

- ½ red onion, sliced thin

- ½ cup balsamic vinegar

- 1 tsp agave

- 2 micro carrot tops

- 1 orange, juiced

- 1 ea lime, juiced

- salt 

 

To make pickled onions:

Boil one cup of hot water.

Place red onion, sliced thin, in small bowl.

Pour hot water over onion, let steep for one minute, drain.

Add juice of orange and lime, add pinch of salt, let steep one hour or overnight.

Remove onions and enjoy as desired.

 

To make balsamic reduction:

- ½ cup balsamic vinegar

- 1 tsp agave

Place both ingredients in a small pot, over medium heat, reduce vinegar until thick and syrupy, about 12 minutes

 

Assemble the salad:

Arrange tomato slices in a ring or straight line.

Arrange diced watermelon in middle.

Place pickled onions around tomato.

Place micro carrot top (tops of carrot greens) in middle.
